Simplest Jam made with Exotic Ingredients When I was little, one of my favorite treats were fresh pineapple. A pineapple is a seasonal fruit in India so finding ways to preserve it for rest of the year was quite natural. The obvious was Pineapple Jam; still my most favorite! Paneer Paratha

Punjabi cuisine has given the greatest gift to Indian cuisine – paneer. Soft (Indian) cottage cheese full of fat has to somehow translate in any language as ‘yum’! A whole-wheat flat bread filled with mildly spiced paneer served with yogurt is just a breakfast for Punjabis but can be a complete meal for me. I need a better picture and the only way to get it is to make these parathas when S is not around. लाल भोपळ्याचे धपाटे / Pumpkin Paratha

When I saw a small red pumpkin in farmer’s market, it reminded me of my childhood. My gradma (aajji) used to make gharage (घारगे) and dhapate (धपाटे). I used to love eating gharage after coming home from school. ‘Gharga’ is a sweet pumpkin puri and of couse a deep fried puri. Dhapata on the other hand, is a savory version and it’s not deep fried, so it’s more like a paratha or thepla. It must be healthy as there is nothing unhealthy – either ingredients or the process. VitaMAX Smoothie

The inspiration for this smoothie came from the ‘Power Juice’ recipe by Chef Parag. He used beet root and carrot juice together with lemon juice. I was looking for a creamy texture so instead of just using juices I decided to make a smoothie. Needless to mention it’s loaded with vitamins and mineral from beet root and carrots and hence the name! Upma doesn’t really need any introduction. It’s as famous in Maharashtra as in South India. We also have a slight modified version of Upma + Turmeric powder which we call “सांजा  / Sanja”.  Very simple, yet wholesome healthy dish  great for breakfast. Upma with a bowl of soup has become our favorite choice for dinner. It’s actually quite versatile recipe and can be made with semolina which is made of wheat, idly rava (made with rice),  vermicilli and even oats or couscous. Also you can add veggies if you like. Two years and two months, I had successfully put off the urge of making chocolate chip cookies at home.
